Heavy Metals in Food and Water
Food manufacturers and producers closely monitor the levels of arsenic, cadmium, mercury, and lead in their products due to the high toxicity of these heavy metals. The US Food and Drug Administration (FDA) has established action levels for certain heavy metals in food products. For example, activity levels have been set for arsenic in apple juice, rice cereals intended for infants, and lead-in candy that young children may frequently consume. Furthermore, the FDA has established activity levels for cadmium and lead in pottery ceramics and silver-plated hollowware.
